Healthy Pumpkin Smoothie

Everyone here at the Westchester Park Blog is so excited for Fall! Not only do we love this season, but we love all the sights, smells, and tastes around here in Manhattan, KS. Pumpkin is the flavor of the month and we think it should be the star of the show, no matter what meal or dish you’re making. With the Holiday season just around the corner, we love any excuse to add a little festivity to our foods.

 

Shugary Sweets has this recipe for a pumpkin smoothie- we think this is the perfect way to incorporate fall flavors to your breakfast! This smoothie will be a perfect refreshing treat to enjoy all season long. The site mentions you can add a scoop of vanilla protein powder, and this can keep you full all day long. If you want to make your own pumpkin puree, this is definitely an option! Look for instructions online on how to roast small pumpkins, and you can save on the canned kind. This is a great way to monitor just where your food is coming from and what ingredients are in it. This recipe can be doubled as well if you have someone else you want to share with. For those with food allergies, the yogurt and milk can be switched out for avocado, almond milk, or coconut milk. Feel free to experiment to your liking, but we highly recommend letting pumpkin find its way into any meal!

 

INGREDIENTS:

 

1/2 cup pure pumpkin puree

1 large banana

6-8 ice cubes

6 oz vanilla yogurt

1/2 tsp pumpkin pie spice

1 tsp agave nectar (or honey would work too)

3 Tbsp milk

pinch nutmeg and whipped cream, optional garnish

DIRECTIONS:

— In a blender, combine pumpkin, banana, ice, yogurt, spice, agave nectar and milk. Pulse until smooth!

— Pour into a glass and top with whipped cream and pinch of nutmeg. ENJOY!
